Experience the flavor of Hokkaido's autumn with Farm Sakamoto's variety of organic potatoes* and onions. After these potatoes and onions are carefully harvested, they are placed in a cool, dark room which increases their sweetness. With this balanced variety of potatoes, there are endless possibilities to the dishes that can be made!
Red moon – This highly sticky potato holds its shape well even after simmering, making it ideal for soups, stews and curries. It is also suitable for stir-frying as it does not fall apart easily. Its slightly sweet taste, smooth texture, and yellow appearance makes it a good choice for potage.
Kita-akari – Also termed “chestnut potatoes”, this potato with its powdery bright yellow flesh has a hunky yet smooth texture, and is suitable for making both potato salad and croquettes.
Touya – This round potato with a few dimples and yellow flesh has a smooth, viscous texture. It can hold its shape well, thus making it suitable for stews, boiled dishes, potato salad, etc.
Inka no Mezame – With a starch content higher than barley taro and kita-akari, this small and rare potato is imbued with a rich flavor and is less likely to fall apart when cooked. When stored under low temperatures, its sucrose content increases, giving it a distinct sweetness and rendering it ideal for use in sweets.
May Queen – This sticky potato is easily identified by its long oval, shallowly indented shape and pale yellow flesh. It is often used in stews, meat and potatoes, boiled dishes, and stir-fried dishes.
Onion – Harvested by hand and perfectly trimmed, the cultivation of each onion is closely monitored so that every harvest guarantees sweetness and moisture content. As farmers are not pressured to control their size, the onions appear in random sizes. These onions make a delicious side dish when roasted with a generous amount of butter.
