■ HOW TO ENJOY | Sake, Wine, and Potato
- Texture: Take out 15 min before eating. Cool inside, melty outside.
- Fruit: Fig, apple compote, persimmon. Salt + sweet = perfect.
- Drink: Warm sake 40°C / Pale Ale / Light Pinot Noir. Milk fat blooms beautifully.
- Potato: On steamed new potato. Simple and best.
